Meatless Vegetable Soup
3 cups V8 Juice
1 16 oz can tomato paste
1 tsp chopped garlic
1/4 cup chopped onion
1 16 oz bag mixed vegetables for soup or stew
1 14 oz can vegetable broth
1 ½ cups water
½ tsp Italian seasonings
½ tsp salt
½ tsp sugar (optional)
Combine all ingredients in slow cooker. Stir well. Cover and cook: Low - 6 hours or High - 3 hours. Makes about 3 quarts.
Meatless Chili
1 tbsp vegetable oil
1 medium onion, chopped
1 3/4 oz envelope chili seasoning
1 16 oz can Great Northern beans, drained
1 15 oz can kidney beans, drained
1 15 oz can black beans, drained
1 14 oz can diced tomatoes
1 8 oz can tomato sauce
1 14.5 oz can vegetable broth
In a skillet over medium-high heat cook onion in the oil until soft. Place onion mixture into the slow cooker. Add remaining ingredients. Stir to mix. Cover and cook: Low - 8 hours or High - 4 hours. Makes about 3 quarts.
Beef Stew
1 lb bag baby carrots
2 lb boneless beef chuck roast, cubed
2 large potatoes, cubed
1 10 3/4 oz cans condensed cream of tomato soup
1 cup water
1 1.5 oz envelope beef stew seasoning mix
Cur carrots in half crosswise. Place beef, carrots, and potatoes in slow cooker. In a bowl, whisk together the soup, water and seasoning packet. Pour over beef and vegetables. Cover and cook: Low - 8 hours or High - 4 hours. Makes about 3 quarts.
Pot Roast German-Style
1/3 cup cider vinegar
2 tbsp cup ketchup
1/4 cup chopped onion
½ tsp chopped garlic
1 14 oz can beef broth
8 ginger snap cookies
1 0.8 oz envelop brown gravy mix
2 - 3 lb boneless chuck or bottom round roast
Combine all ingredients, except the meat, in slow cooker. Stir well. Add the meat and stir well to coat. Cover and cook: Low - 10 hours or High - 5 hours. Makes about 4 to 5 servings.
Chicken Hawaiian Style
3 lb skinless, boneless chicken breasts, halved
1 16 oz can pineapple slices, drained
1 15 oz can mandarin oranges, drained
2 tbsp cornstarch
3 tbsp brown sugar, packed
2 tbsp lemon juice
1/4 tsp salt
1/4 tsp ground ginger
Combine all ingredients in slow cooker. Stir well. Cover and cook: Low - 6 - 8 hours or High - 3 hours. Makes about 6 to 8 servings.
Onion-Coated Beef Roast
½ cup steak sauce
2 - 3 lb bottom round or rump beef roast
2 tbsp dried minced onion
Pour steak sauce into slow cooker. Place meat in slow cooker and coat both sides with the sauce. Sprinkle each side with 1 tablespoon of the dried onion. Cover and cook: Low - 10 hours or High - 5 hours. Makes about 6 services.
Swedish Meatballs
2 ½ lb frozen cook meatballs
1 10 ½ can cream of mushroom soup, undiluted
1 10 ½ can golden mushroom soup, undiluted
1 14 oz can beef broth
1 3/4 oz envelope brown gravy mix
Combine all ingredients in slow cooker. Stir well. Cover and cook: Low - 6 hours or High - 3 hours. Makes about 3 quarts.
Sweet and Spicy Meat Balls
2 ½ lb frozen cooked meatballs
1 12 oz jar grape jelly
1 12 oz jar currant jelly
1 12 oz bottle chili sauce
1 12 oz bottle cocktail sauce
Combine all ingredients in slow cooker. Stir well. Cover and cook: Low - 6 hours or High - 3 hours. Makes about 3 quarts.
Tex-Mex Barbecue
3 lb brisket of beef
1 18 oz bottle hickory-smoked barbecue sauce
1 1/25 envelope chili seasoning
1 tsp chopped garlic
1 tsp lemon juice
1 tbsp Worcestershire sauce
½ cup chopped onion
Combine all ingredients, except meat, in slow cooker. Stir well. Add meat and stir well to coat. Cover and cook: Low - 10 hours or High - 5 hours.
Remove the meat and shred. Return the meat to the slow cooker. Stir well. Serve on soft rolls. Makes about 8 servings.
Pot Roast
3 lb boneless beef chuck roast
1 tsp salt
1/4 tsp pepper
4 medium potatoes, quartered
4 carrots, cut into 2 inch pieces
1 medium onion, quartered
1/4 cup water or beef broth
Sprinkle roast with salt and pepper. Place vegetables in bottom of slow cooker. Top with roast. Add liquid. Cover and cook: Low - 10 hours or High - 5 hours. Makes about 6 servings.
Meat Loaf
2 eggs, beaten
3/4 cups milk
3/4 cups dry bread crumbs
1 1 oz envelope dry onion soup mix
2 lb lean ground beef
To make the removal of meat load easier when it is done, line the slow cooker with a wide strip of aluminum foil, bringing it up the sides of the cooker. In a large bowl, combine eggs, milk, bread crumbs and soup mix. Mix well then add meat. Mix thoroughly and shape into a rectangle or over that won’t touch the sides of the slow cooker. Place in pot. Cover and cook: Low - 6 hours or High - 3 hours. Makes about 6 servings.
