Slow Cooker    



Spanish Chicken
 
6   Chicken breasts
1   14.5 oz can Italian-style stewed tomatoes
1   10 oz bag frozen peas
1   14 oz can chicken broth
3/4 cup roasted red peppers, drained and cut into strips
1   8 oz box Spanish-style yellow rice mix
1 tsp garlic sale
 
Combine all ingredients in slow cooker.  Stir well.  Cover and cook: Low - 8 hours or High - 4 hours.  Makes about 4 - 6 servings.
 
Chicken in a Crock Pot
 
1   16 oz package frozen mixed vegetables
1   1.5 envelope beef stroganoff sauce mix
6   chicken breasts
½ tsp each: paprika, onion powder, garlic powder
 
Combine vegetables and sauce mix in slow cooker.  Sprinkle seasonings on chicken.  Place chicken in pot over vegetables.  Cover and cook: Low - 8 hours or High - 4 hours.  Makes  about 4 - 6 servings.
 
Old Fashioned New England Dinner
 
2 lb boneless, smoked ham
1   16 oz can whole potatoes, drained
1   16 oz bag frozen baby carrots
1 lb cabbage, cut in wedges
1/4 cup water
 
Place the meat in the slow cooker and fit the vegetables around it.  Cover and cook: Low - 6 hours or High - 3 hours.  Makes about 4 servings.
 
Beef Stew
 
3 lbs boneless beef stewing cubes
1   16 oz package frozen vegetables for stew
1   14 oz can beef broth
2 tbsp vinegar
2 tbsp brown sugar, packed
1 .87 oz envelop brown gravy mix
 
Combine all ingredients in slow cooker.  Cover and cook: Low - 10 hours or High - 5 hours.  Makes about 3 quarts.
 
Chicken and Barley Soup
 
1   14 oz can chicken broth
1   16 oz package frozen vegetables for soup or stew
2/3 cup pearl barley
1 cup fresh mushroom slices
2 cups water
1   1.8 oz envelope dry vegetables soup mix
1 lb boneless chicken breasts, cut in cubes
½ tsp salt
1/8 tsp pepper
 
Combine all ingredients in slow cooker.  Cover and cook: Low - 6 hours or High- 3 hours.  Makes about 3 quarts.
 
Cream of Tomato Soup
 
1   28 oz can tomato puree
1   6 oz can tomato paste
1   1.8 oz envelope white sauce mix
1   12 oz can evaporated milk
1 cup water
1   14 oz can vegetable or chicken broth
1 tsp salt
1 tsp sugar
1 ½ tsp dried basil
 
Combine all ingredients in the slow cooker.  Stir well.  Cover and cook: Low - 6 hours or High - 3 hours.  Makes about 2 ½ quarts.
 
Creamy Corn/Potato Chowder
 
3   16 oz cans creamed corn
1/4 cup chopped onion
1   12 oz can evaporated milk
1   14 oz can chicken broth
1 cup water
1   7.06 oz box sour cream and chive flavored dry mashed potato mix
 
Combine all ingredients in crock.  Stir well.  Cover and cook: Low - 6 hours or High - 3 hours.  Makes about 3 quarts.
 
Italian Style Beef Stew
 
2 lb boneless beef stewing cubes
1   10 oz box frozen mixed vegetables
1   15 oz can tomato sauce
1 tbsp Worcestershire sauce
2 tbsp chopped onion
1   1.5 oz envelope beef stew seasoning mix
 

Combine all ingredients in slow cooker.  Stir well.  Cover and cook: Low - 10 hours or High - 5 hours.  Makes about 3 quarts.
 
Manhattan Clam Chowder
 
1   32 oz bottle tomato juice
1   6 oz can tomato paste
3   6 ½ oz cans chopped clams, with liquid
1   16 oz bags frozen mixed vegetables for soup or stew
1   16 oz can sliced potatoes, drained
½ tsp garlic powder
½ tsp Italian seasonings
 
Combine all ingredients in slow cooker.  Stir well.  Cover and cook: Low - 6 hours or High - 3 hours.  Makes about 3 quarts.         
 
 
 
Beef and Sausage Stew
 
3 lbs boneless beef stewing cubes
1 lb Polish kielbasa or other smoked sausage
1   1.5 oz envelope brown gravy mix
1   16 oz bag frozen vegetables for soup or stew
1   14 oz can beef broth
1 tbsp Worcestershire sauce
 
Combine ingredients in slow cooker.  Stir well.  Cover and cook:  Low - 10 hours or High - 5 hours.  Makes about 2 ½ quarts.
 
Two Alarm Chili
 
1 lb Italian sausage, removed from casings **
1 lb lean ground beef
1 medium onion, chopped
1   3/4 oz can kidney beans, drained (optional)
1   14 oz can diced tomatoes
1   6 oz can tomato paste
1   15 oz can chicken broth
1 package Two Alarm Chili Mix or other suitable Chili mix ***
 
Crumble sausage and ground beef into large skillet.  Add onion.  Over medium high heat, partially cook sausage, ground beef and onion.  Place cooked meet mixture in slow cooker.  Add remaining ingredients.  Cover and cook: Low - 8 hours or High - 4 hours.  Makes about 3 quarts.
 
 **   Ground sausage may be used or all ground beef may be used, eliminating the sausage.
*** Use the ingredients in the chili mix according to the directions.  Eliminate the chili pepper for a mild chili or add it for a spicier chili.
 
Lone Star Chili Soup
 
3   16 oz cans red kidney beans, drained
1   1.25 oz envelopes chili seasoning
1   15 oz can tomato soup
½ cup chopped onion
1 ½ lb stew beef cut in cubes
1   14 oz can beef broth
½ tsp salt
½ tsp garlic powder
 
Combine all ingredients in slow cooker.  Stir well.  Cover and cook: Low - 10 hours or High - 5 hours.  Makes about 3 quarts.
 
 
Meatless Vegetable Soup
 
3 cups V8 Juice
1   16 oz can tomato paste
1 tsp chopped garlic
1/4   cup chopped onion
1   16 oz bag mixed vegetables for soup or stew
1   14 oz can vegetable broth
1 ½   cups water
½ tsp Italian seasonings
½ tsp salt
½ tsp sugar (optional)
 
Combine all ingredients in slow cooker.  Stir well.  Cover and cook: Low - 6 hours or High - 3 hours.  Makes about 3 quarts.
 
Meatless Chili
 
1 tbsp vegetable oil
1 medium onion, chopped
1   3/4 oz envelope chili seasoning
1   16 oz can Great Northern beans, drained
1   15 oz can kidney beans, drained
1   15 oz can black beans, drained
1   14 oz can diced tomatoes
1   8 oz can tomato sauce
1   14.5 oz can vegetable broth
 
In a skillet over medium-high heat cook onion in the oil until soft.  Place onion mixture into the slow cooker.  Add remaining ingredients.  Stir to mix.  Cover and cook: Low - 8 hours or High - 4 hours.  Makes about 3 quarts.
 
Beef Stew
 
1 lb bag baby carrots
2 lb boneless beef chuck roast, cubed
2 large potatoes, cubed
1   10 3/4 oz cans condensed cream of tomato soup
1 cup water
1   1.5 oz envelope beef stew seasoning mix
 
Cur carrots in half crosswise.  Place beef, carrots, and potatoes in slow cooker.  In a bowl, whisk together the soup, water and seasoning packet.  Pour over beef and vegetables.  Cover and cook:  Low - 8 hours or High - 4 hours.  Makes about 3 quarts.
 
Pot Roast German-Style
 
1/3 cup cider vinegar
2 tbsp cup ketchup
1/4 cup chopped onion
½ tsp chopped garlic
1   14 oz can beef broth
8 ginger snap cookies
1   0.8 oz envelop brown gravy mix
2 - 3 lb boneless chuck or bottom round roast
 
Combine all ingredients, except the meat,  in slow cooker.  Stir well.  Add the meat and stir well to coat.  Cover and cook: Low - 10 hours or High - 5 hours.  Makes about 4 to 5 servings.
 
Chicken Hawaiian Style
 
3 lb skinless, boneless chicken breasts, halved
1   16 oz can pineapple slices, drained
1   15 oz can mandarin oranges, drained
2 tbsp cornstarch
3 tbsp brown sugar, packed
2 tbsp lemon juice
1/4 tsp salt
1/4 tsp ground ginger
 
Combine all ingredients in slow cooker.  Stir well.  Cover and cook: Low - 6 - 8 hours or High - 3 hours.  Makes about 6 to 8 servings.
 
Onion-Coated Beef Roast
 
½ cup steak sauce
2 - 3 lb bottom round or rump beef roast
2 tbsp dried minced onion
 
Pour steak sauce into slow cooker.  Place meat in slow cooker and coat both sides with the sauce.  Sprinkle each side with 1 tablespoon of the dried onion.  Cover and cook: Low - 10 hours or High - 5 hours.  Makes about 6 services.
 
Swedish Meatballs
 
2 ½ lb frozen cook meatballs
1   10 ½ can cream of mushroom soup, undiluted
1   10 ½ can golden mushroom soup, undiluted
1   14 oz can beef broth
1   3/4 oz envelope brown gravy mix
 
Combine all ingredients in slow cooker.  Stir well.  Cover and cook: Low - 6 hours or High - 3 hours.  Makes about 3 quarts. 
 
Sweet and Spicy Meat Balls
 
2 ½ lb frozen cooked meatballs
1   12 oz jar grape jelly
1   12 oz jar currant jelly
1   12 oz bottle chili sauce
1   12 oz bottle cocktail sauce
 
Combine all ingredients in slow cooker.  Stir well.  Cover and cook: Low - 6 hours or High - 3 hours.  Makes about 3 quarts.
 
Tex-Mex Barbecue
 
3 lb brisket of beef
1   18 oz bottle hickory-smoked barbecue sauce
1   1/25 envelope chili seasoning
1 tsp chopped garlic
1 tsp lemon juice
1 tbsp Worcestershire sauce
½ cup chopped onion
 
Combine all ingredients, except meat, in slow cooker.  Stir well.  Add meat and stir well to coat.  Cover and cook: Low - 10 hours or High - 5 hours.
 
Remove the meat and shred.  Return the meat to the slow cooker.  Stir well.  Serve on soft rolls.  Makes about 8 servings.
 

Pot Roast
 
3 lb boneless beef chuck roast
1 tsp salt
1/4 tsp pepper
4 medium potatoes, quartered
4 carrots, cut into 2 inch pieces
1 medium onion, quartered
1/4 cup water or beef broth
 
Sprinkle roast with salt and pepper.  Place vegetables in bottom of slow cooker.  Top with roast.  Add liquid.  Cover and cook: Low - 10 hours or High - 5 hours.  Makes about 6 servings.
 

Meat Loaf
 
2 eggs, beaten
3/4 cups milk
3/4 cups dry bread crumbs
1    1 oz envelope dry onion soup mix
2 lb lean ground beef
 
To make the removal of meat load easier when it is done, line the slow cooker with a wide strip of aluminum foil, bringing it up the sides of the cooker.  In a large bowl, combine eggs, milk, bread crumbs and soup mix.  Mix well then add meat.  Mix thoroughly and shape into a rectangle or over that won’t touch the sides of the slow cooker.  Place in pot.  Cover and cook: Low - 6 hours or High - 3 hours.  Makes about 6 servings.
 
Savory Roast Beef
 
3 lb boneless beef chuck roast
1/4 cup soy sauce
1 tbsp brown sugar
1 tsp salt
1 tsp ground ginger
 
 
 
Cut beef into thin slices and place in slow cooker.  Combine coy, brown sugar, salt and ginger and pour over beef.  Cover and cook: Low - 6 hours or High - 3 hours.  Makes 6 servings.  Serve on Whole Wheat rolls for sandwiches.
